A decadent, no added sugar, whole-food plant-based "cheesecake".

 

Ingredients:

(Amount suitable for two 4 inch (10cm) cake tins.)

Base:

1/2 cup cashews
1 heaping tbsp peanut butter
1/2 cup golden raisins

Pinch of salt
1 tbsp soy milk


Poppy seed layer:

1/2 cup ground poppy seeds
1/2 raisins
Zest and juice of 1/2 an orange
Zest and juice of 1/2 a lemon
2-3 tbsp brandy
Splash of vanilla essence

"Cheese" layer:

1 cup dates
1/2 cup soy milk
300g silken tofu
Zest and juice of 1/2 an orange
Zest and juice of 1/2 a lemon
Splash of vanilla essence
