In my opinion, this animal-free quiche tastes remarkably like a "real" quiche. 

Ingredients:

Pastry:

1 cup self-raising wholemeal flour
1 cup ground almonds
Cashew cream (? cup cashes; ? cup soy milk)
Pinch of salt
 

Filling:

400g firm tofu
200g smoked tofu
Cashew cream (? cup cashes; 2/3 cup soy milk)
2 tbsp soy sauce
½ cup nutritional yeast
1 tbsp thyme
1 & 1/2 cups chopped leaks
¼ tsp turmeric
½ tsp paprika
Black pepper
