My all time favourite Christmas dessert containing a wonderful blend of spices making this season even more special. 

 

Ingredients:

Mince meat:

3/4 cup currents
1 cup chopped dates
1 + 3/4 cup raisins
1/2 cup walnuts (chopped)
2 apples (grated)
Zest and juice of 1 lemon
Zest and juice of 1 orange
1 tsp cinnamon
1 tsp ground ginger
1/4 tsp nutmeg
1/4 tsp ground cloves
2 tbsp brandy


Pastry:

1 cup ground almonds/cashews
1 cup whole wheat self-raising flour
Cashew cream (1/3 cup cashews, 2/3 cup soy milk)
Pinch of salt
Soy milk (as required)
