My all-time favourite Christmas dessert.
Ingredients:
Mince meat:
¾ cup currents
1 cup chopped dates
1 + ¾ cup raisins
½ cup walnuts (chopped)
2 apples (grated)
Zest and juice of 1 lemon
Zest and juice of 1 orange
1 tsp cinnamon
1 tsp ground ginger
¼ tsp nutmeg
¼ tsp ground cloves
2 tbsp brandy
Pastry:
1 cup ground almonds/cashews
1 cup whole wheat self-raising flour
Cashew cream (? cup cashews, ? cup soy milk)
Pinch of salt
Soy milk (as required)
